“Sustainable Food Procurement at the Macalester EcoHouse”

Marian Michaels ‘15 and Karen Weldon ‘14 will present their research on sustainable food purchasing at the Macalester EcoHouse. Michaels and Weldon will make recommendations for sustainable food purchasing on a budget and examine the sustainability of purchasing from local food cooperatives and farmers markets. They will assess their food purchasing through the Real Food Challenge’s “Real Food Calculator,”  a tool that Macalester College has pledged to use as the basis for the International Roundtable commitment to sustainable food sourcing. Michaels and Weldon will unpack the Real Food Challenge’s definition of “real food,” weighing its pros and cons through their study on food purchasing at the Macalester EcoHouse.  Refreshments provided.
